Lechon con tokwa
Ingredients

  • 1-kilo slab of pork belly with rind
  • light soy sauce (to taste)
  • 6 small or 1 large tokwa (firm tofu)
  • 3/4 c. of vinegar (I used rice vinegar)
  • Salt
  • 3/4 c. (or more) of sugar
  • 1 whole garlics
  • 1-2 tbsps. of tapioca starch
  • 2 whole onions
  • 2-3 hot chili peppers (finger chilis)
  • 8 peppercorns
  • 3-4 c. of cooking oil
  • 1 bay leaf
  • 2 tbsps. of tausi (salted black beans), drained and rinsed
